Kokosova mouka je vyrobena z cerstve kokosove duziny, ktera je nejprve susena a pak jemne mleta na prasek, ktery je na prvni pohled velmi podobny psenicne mouce.
V nekterych receptech, napriklad na palacinky, zakusky, nebo vanocni cukrovi, lze klasickou mouku uplne nahradit kokosovou moukou. Pri priprave takoveho testa je vhodne pridat oproti puvodnimu receptu bud jedno vejce navic, nebo xantanovou gumu. S xantanem se vam testo bude mene drobit a bude lepe drzet tvar. Navic hotove vyrobky zustanou mnohem dele krehke, cerstve a budou pomaleji vysychat.
