Without Auricularia or Judicular’s ear (Auricularia polytricha), which grows on deciduous trees around the world, Asian cuisine is unimaginable. The auricularia owes its Czech name to Judas’ ear to the Christian interpretation, according to which Judas, the traitor of Jesus, hanged himself on the elderberry trunk, on which the earlobe-shaped mushrooms later began to grow. More important than the name, appearance and legends associated with this fungus are the substances it contains for the mycotherapist and their effects. Auricularia polytricha is one of the oldest edible mushrooms and has been grown in China for about 1,500 years. Auricularia has been used for medicinal purposes for centuries in both China and Europe. It is used mainly to strengthen the blood vessels and the cardiovascular system.
Bez Auricularie neboli jidášova ucha (Auricularia polytricha), která roste na celém světě na listnatých stromech, si asijskou kuchyni nelze představit. Za své české jméno Jidášovo ucho vděčí auricularia křesťanskému výkladu, podle něhož se Jidáš, zrádce Ježíše, oběsil na kmeni bezu, na němž posléze začaly růst houby tvaru ušního boltce. Důležitější než jméno, vzhled a legendy vztahující se k této houbě, jsou pro mykoterapeuta látky v ní obsažené, a to, jaké mají účinky. Auricularia polytricha je jedna z nejstarších jedlých hub a v Číně se pěstuje již cca 1.500 let. Auricularia byla používána k léčebným účelům po staletí jak v Číně, tak v Evropě. Je užívána hlavně na posílení krevních cév a kardiovaskulárního systému.
